Step 1Simmer the beef

  • 1 lb thinly sliced beef (ribeye or sirloin, shaved)
  • 2 medium onions (thinly sliced)
  • 1 cup dashi (or 1 cup water + 1 tsp dashi powder)
  • ¼ cup soy sauce
  • 3 tbsp mirin
  • 2 tbsp sake
  • 2 tbsp sugar
  • 1 tbsp grated ginger

Step 2Serve

  • 4 cups cooked Japanese short-grain rice
  • 4 onsen tamago or soft-boiled eggs (optional)
  • Pickled ginger (beni shoga)
  • Sliced green onions
  • Shichimi togarashi (optional)
