Ingredients
Step 1 — For the Meatloaf
- 1.5 lbs ground turkey
- 1/2 cup breadcrumbs (panko or regular)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 1 large egg, lightly beaten
- 1/4 cup milk
- 2 tablespoons ketchup, plus more for topping
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Step 2 — For the Sweet Potato Mash
- 2 lbs sweet potatoes, peeled and cubed
- 2 tablespoons butter
- 1/4 cup milk (or cream)
- Salt and black pepper to taste

Prepare Sweet Potatoes
Place the cubed sweet potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain well.

Make Meatloaf Mixture
While the sweet potatoes cook, combine all meatloaf ingredients (ground turkey, breadcrumbs, onion, bell pepper, egg, 1/4 cup milk, 2 tbsp ketchup, Worcestershire sauce, Italian seasoning, salt, pepper) in a large bowl. Gently mix with your hands until just combined. Be careful not to overmix.

Shape and Bake Meatloaf
Preheat oven to 375°F (190°C). Shape the meatloaf mixture into a loaf on a baking sheet lined with parchment paper or in a loaf pan. Spread additional ketchup over the top. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

Mash Sweet Potatoes
Return the drained sweet potatoes to the pot. Add butter and 1/4 cup milk. Mash with a potato masher or use an electric mixer until smooth and creamy. Season with salt and pepper to taste.

Let the meatloaf rest for 5-10 minutes after baking before slicing. Serve slices of meatloaf with a generous portion of sweet potato mash.
