Quick Turkey Meatloaf Muffins with Sweet Potato Mash
Individual-sized turkey meatloaves baked in muffin tins for quick cooking and portion control. Paired with a simple, naturally sweet mashed sweet potato side.

Ingredients
Step 1 — For the Turkey Meatloaf Muffins
- 1.5 lbs ground turkey
- 1/2 cup breadcrumbs (plain or Italian)
- 1/4 cup finely chopped onion
- 1/4 cup milk
- 1 large egg, lightly beaten
- 1 tablespoon ketchup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- Extra ketchup, for topping (optional)
Step 2 — For the Sweet Potato Mash
- 2 lbs sweet potatoes, peeled and cubed
- 1 tablespoon butter
- Pinch of salt

Preheat and Prep Muffin Tin
Preheat oven to 400°F (200°C). Lightly grease a 12-cup muffin tin or line with paper liners.

Boil Sweet Potatoes
Place cubed sweet potatoes in a saucepan, cover with water, and bring to a boil. Cook for 15-20 minutes until fork-tender. Drain well.

Mix Meatloaf Ingredients
In a large bowl, combine ground turkey, breadcrumbs, chopped onion, milk, egg, 1 tablespoon ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined; do not overmix.

Form and Bake Meatloaf Muffins
Divide the turkey mixture evenly among the prepared muffin cups, pressing gently into the bottom and up the sides. Top each with a small dollop of extra ketchup, if desired. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and they are cooked through.

Mash Sweet Potatoes and Serve
While meatloaf muffins bake, mash the drained sweet potatoes with butter and a pinch of salt until smooth. Serve the turkey meatloaf muffins immediately with a side of sweet potato mash.
