Step 1 — For the Baked Cod
- 4 (6 oz) cod fillets
- 1 pint cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 2 tbsp capers, drained
- 3 cloves garlic, thinly sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Juice of 1/2 lemon
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish

Preheat and Prepare
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat cod fillets dry and season with salt and pepper.

Combine Toppings
In a medium bowl, combine the halved cherry tomatoes, olives, capers, sliced garlic, olive oil, oregano, basil, lemon juice, salt, and pepper. Toss gently to combine.

Assemble and Bake
Arrange the cod fillets on the prepared baking sheet. Spoon the tomato and olive mixture evenly over the top of each fillet. Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork, and the tomatoes have softened.

Garnish with fresh chopped parsley before serving. Serve immediately.
