Ingredients
Step 1 — For the Pork and Vegetables
- 1 lb pork tenderloin, thinly sliced
- 1 tbsp soy sauce (or tamari)
- 1 tsp cornstarch
- 1 tbsp sesame oil
- 1 red bell pepper, thinly sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger
Step 2 — For the Peanut Sauce
- 1/3 cup creamy peanut butter
- 3 tbsp soy sauce (or tamari)
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp sriracha (optional)
- 2-4 tbsp hot water, to thin
Step 3 — For Serving
- 8 oz whole wheat spaghetti or linguine
- Optional: chopped peanuts, sliced green onions for garnish

Marinate Pork
In a medium bowl, toss pork slices with 1 tbsp soy sauce and 1 tsp cornstarch. Let sit for 10 minutes.

Prepare Sauce and Noodles
In a small bowl, whisk together peanut butter, 3 tbsp soy sauce, rice vinegar, honey, and sriracha (if using). Gradually whisk in hot water until sauce reaches desired consistency. Cook whole wheat noodles according to package directions; drain.

Stir-Fry
Heat sesame oil in a large skillet or wok over medium-high heat. Add pork and stir-fry until browned and cooked through. Remove pork from skillet and set aside.

Cook Vegetables
Add bell pepper, broccoli, snow peas, and carrot to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp. Add minced garlic and grated ginger and cook for 1 minute more until fragrant.

Combine and Serve
Return the cooked pork to the skillet. Add the prepared peanut sauce and cooked noodles. Toss everything together until well coated and heated through. Serve immediately, garnished with chopped peanuts and green onions if desired.
