Ingredients
Step 1 — Cookie dough
- 1 cup unsalted butter (softened)
- 1½ cups granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp kosher salt

- Colored sprinkles
- Royal icing
- Extra granulated sugar (for rolling)

Make the dough
Preheat oven to 375°F. Beat butter and sugar until fluffy. Beat in egg and vanilla. Whisk flour, baking powder, baking soda, and salt. Mix until just combined. Chill 30 minutes if rolling and cutting shapes.

Shape and bake
Roll into 1½-inch balls and roll in extra sugar, or roll out dough and cut shapes. Place 2 inches apart on lined baking sheets. Bake 9–11 minutes until edges are set. Cool on pan 5 minutes.
