Ingredients

- 3 tbsp soy sauce
- 2 tbsp mirin
- 4 servings udon noodles
- 4 eggs
- Kamaboko slices (optional)
- Nori strips
- Mitsuba or green onions

Prepare broth
Heat dashi with soy sauce and mirin to a gentle simmer.

Assemble tsukimi
Cook udon and divide among bowls. Crack a raw egg into the center of each bowl. Ladle hot broth over — the egg will poach from the heat. Top with kamaboko, nori, and mitsuba.
