Stir-fried udon noodles with pork, cabbage, and carrots in a savory soy-mirin sauce. Japan's answer to fried noodles — fast and flavorful.

Ingredients
Step 1 — Stir-fry
- 4 servings udon noodles
- 2 tbsp vegetable oil
- ½ lb pork belly (sliced)
- 2 cups cabbage (shredded)
- 1 carrot (julienned)
- 4 green onions (sliced)
Step 2 — Sauce
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp oyster sauce
- 1 tsp sugar
- Bonito flakes
- Beni shoga (pickled ginger, optional)

Stir-fry
Heat oil in a wok over high heat. Stir-fry pork until browned. Add cabbage and carrot, cook 2 minutes. Add udon and sauce, toss 3–4 minutes until noodles are coated and slightly crispy.

Top with green onions, bonito flakes, and beni shoga.
