Step 1 — For the Casserole Base
- 1 lb lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb potatoes (like Yukon Gold), peeled and cut into 1/2-inch cubes
- 1/2 cup beef broth

- 1 cup shredded cheddar cheese
- 1/4 cup breadcrumbs (optional)

Brown Beef and Sauté Aromatics
In an oven-safe skillet or Dutch oven (that fits in your air fryer), brown the ground beef over medium-high heat. Drain off excess fat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic, chili powder, cumin, salt, and pepper, and cook for 1 minute more until fragrant.

Add Potatoes and Broth
Add the cubed potatoes and beef broth to the skillet. Stir to combine. Bring to a simmer.

Air Fry Casserole
Cover the skillet with foil (if using a skillet that doesn't have a lid that can be used in the air fryer) and place it in the air fryer basket. Cook at 375°F (190°C) for 20 minutes, or until the potatoes are tender. Remove the foil.

Add Cheese and Finish
Top the casserole evenly with shredded cheddar cheese and breadcrumbs (if using). Return to the air fryer, uncovered, for 3-5 minutes, or until the cheese is melted and bubbly.
