Air Fryer Chicken and Veggie Skewers with Peanut Sauce

Ingredients
Step 1 — For the Chicken Marinade
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
Step 2 — For the Skewers
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 8 oz mushrooms, halved or quartered
- Wooden or metal skewers (soak wooden skewers in water for 30 minutes)
Step 3 — For the Peanut Sauce
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon sriracha (optional)
- 2-3 tablespoons warm water, to thin

Marinate Chicken
In a bowl, combine all ingredients for the chicken marinade. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

Assemble Skewers
Thread the marinated chicken cubes, bell pepper pieces, red onion chunks, and mushrooms onto the skewers, alternating ingredients. Do not pack too tightly.

Air Fry Skewers
Preheat air fryer to 400°F (200°C). Place skewers in the air fryer basket in a single layer (cook in batches if necessary). Ensure skewers aren't touching each other or the sides of the basket.

Cook Skewers
Cook for 12-15 minutes, flipping the skewers halfway through, until the chicken is cooked through and vegetables are tender with slight charring. Internal temperature of chicken should reach 165°F (74°C).

Make Peanut Sauce
While skewers cook, whisk together peanut butter, soy sauce, lime juice, honey, and sriracha (if using) in a bowl. Gradually whisk in warm water until the sauce reaches desired consistency.

Serve the air-fried skewers hot, drizzled generously with the peanut sauce. Garnish with sesame seeds or chopped peanuts if desired.
