Step 1 — For the Chicken Filling
- 2 cups cooked shredded chicken (rotisserie chicken works well)
- 1/4 cup salsa
- 1/4 cup shredded Monterey Jack cheese
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- Salt and pepper to taste
Step 2 — For the Taquitos
- 8-10 small corn tortillas
- 1 tablespoon olive oil or vegetable oil
- Non-stick cooking spray
Step 3 — For the Avocado Crema
- 1 ripe avocado, pitted and scooped
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon lime juice
- 1 clove garlic
- Salt to taste
- 2-3 tablespoons water (to thin)

Make Chicken Filling
In a bowl, combine the shredded chicken, salsa, Monterey Jack cheese, cumin, chili powder, salt, and pepper. Mix well.

Prepare Tortillas
Warm the corn tortillas slightly in the microwave or on a dry skillet until pliable. Mix the oil with the salt and pepper. Brush one side of each tortilla with the seasoned oil.

Assemble Taquitos
Spoon about 2-3 tablespoons of the chicken filling onto the oiled side of each tortilla, near one edge. Roll up tightly. Secure with a toothpick if needed.

Air Fry Taquitos
Preheat air fryer to 380°F (190°C). Arrange the taquitos seam-side down in the air fryer basket, ensuring they don't touch. Lightly spray the tops with non-stick cooking spray. Cook for 10-15 minutes, flipping halfway through, until golden brown and crispy. Remove toothpicks before serving.

In a blender or food processor, combine avocado, sour cream (or yogurt), lime juice, garlic, salt, and water. Blend until smooth and creamy, adding more water if needed to reach desired consistency.
