Shaking beef — wok-seared cubes of tender beef tossed with garlic, butter, and a tangy lime-pepper dipping sauce. A Vietnamese-French classic.

Ingredients
Step 1 — Marinate the beef
- 1.5 lbs beef sirloin (cut into 1-inch cubes)
- 2 tbsp fish sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
- 4 garlic cloves (minced)
- 1 tbsp vegetable oil
Step 2 — Dipping sauce and serve
- Juice of 2 limes
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp butter
- Lettuce leaves
- Tomato wedges
- Steamed rice or baguette

Marinate
Toss beef with fish sauce, oyster sauce, sugar, garlic, and oil. Marinate 15–30 minutes.

Sear the beef
Heat a wok over very high heat. Sear beef in batches 1–2 minutes per side for a deep crust while keeping centers medium-rare. Return all beef to wok, add butter, toss quickly.

Serve
Mix lime juice, pepper, and salt for dipping sauce. Serve beef on lettuce with tomatoes, rice or baguette, and dipping sauce.
