Ensure tofu is well-pressed to remove excess water. Cut into 1-inch cubes. In a medium bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated. Drizzle with neutral oil and toss again.

Preheat your air fryer to 400°F (200°C). Arrange the coated tofu cubes in a single layer in the air fryer basket, ensuring they don't overlap. Cook for 15-18 minutes, flipping halfway through, until the tofu is golden brown and crispy on all sides.

While the tofu is cooking, whisk together the sweet chili sauce, soy sauce, rice vinegar, and grated ginger in a small bowl until well combined.
