Step 1 — Peach filling
- 6 cups sliced peaches (fresh or frozen, thawed)
- ½ cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- ½ tsp ground cinnamon
- Pinch of salt
Step 2 — Biscuit topping
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp kosher salt
- 4 tbsp cold unsalted butter (cubed)
- ¼ cup whole milk
- 1 tsp vanilla extract

Prepare the peaches
Preheat oven to 375°F. Toss peaches with sugar, cornstarch, lemon juice, cinnamon, and salt. Spread in a greased 9×13 baking dish.

Top and bake
Whisk flour, sugar, baking powder, and salt. Cut in butter until crumbly. Stir in milk and vanilla. Drop spoonfuls over peaches. Bake 35–40 minutes until topping is golden and filling bubbles.
