Cut the sausage, bell pepper, red onion, and zucchini into roughly 1-inch pieces. Ensure they are relatively uniform in size for even cooking.

In a large bowl, combine the sausage pieces, chopped vegetables, olive oil, Italian seasoning, garlic powder, red pepper flakes (if using), salt, and pepper. Toss well to ensure everything is evenly coated.

Arrange the mixture in the air fryer basket in a single layer as much as possible (you will likely need to cook in 2-3 batches). Cook at 400°F (200°C) for 10-15 minutes per batch, shaking the basket halfway through, until the sausage is browned and cooked through, and the vegetables are tender and slightly charred.
